  • 1/2 cup basmati rice, washed and drained
  • 4 cups whole milk

  • 1/4 cup chopped nuts (almonds, cashews, pistachios), toasted
  • 1/2 teaspoon cardamom powder

Instructions
 

  • In a heavy-bottomed pot or handi, heat the sugar over medium heat until it caramelizes, stirring occasionally to prevent burning.
  • Once the sugar has caramelized, carefully add water to the pot and bring it to a boil.
  • Add the washed and drained rice to the boiling water and cook until the rice is tender. and check the rice is melting to water. reduce excess water throw boiling, stirring occasionally to prevent burning.
  • In a separate pot, bring the whole milk to a boil over medium heat.
  • Once the milk has come to a boil, reduce the heat to low and let it simmer for a few minutes.
  • Add the thickened, milk to the rice and stir well. Then put sugar as your taste.
  • Sprinkle the cardamom powder and chopped roasted nuts with ghee over the mixture and continue to cook, stirring occasionally, until the kheer thickens to your desired consistency.
  • Meanwhile, gently rinse the green baby lotus seeds under running water to remove any dirt or impurities.
  • Add the green baby lotus seeds to the kheer and let it simmer for another 5-7 minutes, allowing them to soften slightly and absorb the flavors.
  • Tear the lotus petals into smaller pieces and add them to the kheer. Let it simmer for another 2-3 minutes.
  • Serve the Lotus Petal and Green Baby Lotus Seeds Kheer warm or chilled, garnished with the remaining chopped roasted nuts.
