Instructions

  • Once the sugar has caramelized, carefully add water to the pot and bring it to a boil.

  • In a separate pot, bring the whole milk to a boil over medium heat.
  • Once the milk has come to a boil, reduce the heat to low and let it simmer for a few minutes.
  • Add the thickened, milk to the rice and stir well. Then put sugar as your taste.
  • Sprinkle the cardamom powder and chopped roasted nuts with ghee over the mixture and continue to cook, stirring occasionally, until the kheer thickens to your desired consistency.
  • Meanwhile, gently rinse the green baby lotus seeds under running water to remove any dirt or impurities.
