Badhi Badam Chura — a delicious side dish from Odia cuisine that elevates even simple rice or pakhala to an extraordinary level of taste. It is one of classic side item of Odia Cuisne named Badhi Chura.
A few cloves of garlic, roasted dry red chilies, green chilies, and salt are ground together with badhi (sun-dried lentil dumplings) and peanuts. While a grinder can be used, preparing it on a traditional grinding stone (sil-batta) gives that authentic homemade flavor and aroma.
Prepare it in two parts—
In the first part, garlic, green chilies, and dry red chilies are slightly moistened and ground into a paste.
In the second part, dry badi and peanuts are coarsely ground with salt.

Then both mixtures are combined well, and two spoons of mustard oil are added and mixed thoroughly.
This flavorful Badhi Badam Chura tastes best when enjoyed with pakhala or hot steamed rice — truly satisfying and comforting.
