- 4 cups whole milk

- Once the sugar has caramelized, carefully add water to the pot and bring it to a boil.

- In a separate pot, bring the whole milk to a boil over medium heat.
- Once the milk has come to a boil, reduce the heat to low and let it simmer for a few minutes.
- Add the thickened, milk to the rice and stir well. Then put sugar as your taste.
- Sprinkle the cardamom powder and chopped roasted nuts with ghee over the mixture and continue to cook, stirring occasionally, until the kheer thickens to your desired consistency.
- Meanwhile, gently rinse the green baby lotus seeds under running water to remove any dirt or impurities.
- Add the green baby lotus seeds to the kheer and let it simmer for another 5-7 minutes, allowing them to soften slightly and absorb the flavors.
- Tear the lotus petals into smaller pieces and add them to the kheer. Let it simmer for another 2-3 minutes.
