Chhena Gaja recipe

Ingredients
Milk- 1lit
Vinegar- 3tbsp
Suji- 1tsp
Sugar- 2cup

Process of making


Water- 6cup In a bowl add vinegar and 1/2cup water keep aside.


Now heat milk in a heavy button pan. Continuously stir the milk. Don’t let form malai on top.


When milk is boiled switch off the gas.
Remove from heat and stir continuously for 3mins.


Now add vinegar little by little up to clear water comes.


Now add add water and wash it to remove the tanginess and repeat this for twice.
Squeeze little with hand.


Hang it for for 1/2an hour. Don’t hang for more time.


Now bring out to a big plate. Then knead it with the heel of the palm. When chhena become smooth without any dana. Add 1tsp cornflour and knead again .

In a pan add 1/4 th cup sugar and let it caramel. Now Add water and sugar and keep on the gas. Let th sugar melt.


Divide the dough into its balls. Now form shape and careful there should not be any crack.
Add this boiling sugar syrup on high flame for 1/2an hour. Then flip it and again cook for 1/2an hour.


By this time sugar syrup will be thick. Add 1cup of hot water and again cook for 1/2an hour. Your chhena gaja will be ready.


Total cooking time is 1.5 hour.
