Daal Dhokali (Gujarati: દાળ ઢોકળી) is a Rajasthani and Gujarati dish made by boiling wheat flour pieces in a pigeon pea stew ( harada dali ). A similar preparation is called Varanfal (Marathi: वरण फळ), or Chakolyaa (Marathi: चकोल्या) in Marathi.

One food only have different method of preparations at Rajastan, Gujarat and Mahrasta too. Generaly it’s made with various types of lentils (or Daal). Some commonly used Daals include Toor (Pigeon peas), Masoor (Red lentil), and Moong (Mung bean).

All flavors in the dish can come from Kokum, Jaggery, and spices like Cumin and Asafoetida.

Ingredients
  

  • 1 cup toor dal (rinsed)
  • 3 cup water
  • 2 tsp oil
  • 4 tbsp peanuts
  • 2 tsp ghee / clarified butter
  • 2 tsp mustard
  • 1 tsp cumin / jeera
  • 2 chilli (broken)
  • pinch hing / asafoetida
  • few curry leaves
  • 2 tomato (finely chopped)
  • 2 tsp ginger garlic paste
  • 3 cup water
  • 0.5 tsp turmeric
  • ▢1.5 tsp kashmiri red chilli powder
  • 0.5 tsp cumin powder
  • 1 tsp coriander pwoder
  • small piece jaggery / gud
  • 1.5 tsp salt
  • 2 tsp lemon juice
  • 4 tbsp coriander (finely chopped)

for dhokli:

  • 2 cup wheat flour / atta
  • 0.5 tsp turmeric
  • 1  tsp kashmiri red chilli powder
  • 0.5 tsp ajwain / carom seeds
  • 1 tsp salt
  • 4 tsp oil
  • 1 cup water

Instructions
 

  • in a large kadai heat 1 tsp ghee and splutter tempering.
  • further add 1 tomato, 1 tsp ginger garlic paste and saute until tomatoes turn soft and mushy
  • add in cooked dal, 1½ cup water and mix well adjusting consistency as required.
  • also add ¼ tsp turmeric, ¾ tsp chilli powder, ¼ tsp cumin powder, ½ tsp coriander powder and ¼ tsp garam masala.
  • combine well making sure all the spices are mixed well.
  • additionally add cooked peanuts, small piece jaggery, ¾ tsp salt and 1 tsp lemon juice.
  • once the dal comes to a boil, drop in dhokli pieces and give a good mix well.
  • cover and boil for 10-15 minutes or until dhokli is cooked completely.
  • finally, add 2 tbsp coriander and enjoy dal dhokli with hot steamed rice.

dholki preparation recipe:

  • firstly, in a large mixing bowl take 1 cup wheat flour, ¼ tsp turmeric, ½ tsp chilli powder, ¼ tsp ajwain, ½ tsp salt and 2 tsp oil.
  • combine well until the spices are well combined.
  • further, add ½ cup water and knead the dough.
  • knead to smooth and soft dough
  • take a ball sized dough, dust with wheat flour.
  • roll to slightly thick consistency dusting wheat flour if required
  • cut into diamond shapes or size of your choice.
  • once the dal comes to a boil, drop in dhokli pieces and give a good mix well
  • cover and boil for 10-15 minutes or until dhokli are cooked completely.
  • finally, add 2 tbsp coriander and enjoy dal dhokli with hot steamed rice.
