  • 2-3 dry red chilies
  • 1 teaspoon Ginger Paste
  • 6-7 curry leaves
  • 2 tablespoons Khajuri (dates) paste
  • 2 tablespoons Sugar
  • Salt to taste
  • 1/4 cup shredded coconut
  • 1/4 cup chopped coriander leaves

Instructions

  • Heat oil in a pan over medium heat. Add fenugreek seeds and fry until they start to crackle.
  • Add dry red chilies, ginger paste, and curry leaves to the pan. Sauté for a minute.
  • Add chopped tomatoes, khajuri paste, sugar, and salt to the pan. Mix well and cook covered on low heat for 10-12 minutes, stirring occasionally, until the tomatoes are soft and well cooked.
  • Add shredded coconut and chopped coriander leaves to the pan. Mix well and cook for another 2-3 minutes.
