ପ୍ରସ୍ତୁତି : ଅଳ୍ପ ନିଆଁ ଆଞ୍ଚ ସାହାଯ୍ୟରେ ପାତ୍ରରେ ଅଳ୍ପ ଅଳ୍ପ ଘିଅ ପକାଇ ଅଟା ଭାଜନ୍ତୁ । ଏହାର ରଙ୍ଗ ବାଦାମୀ ହୋଇଗଲେ ସେଥିରେ ଲବଙ୍ଗ ଗୁଣ୍ଡ ଓ ଅଳେଇଚ ଗୁଣ୍ଡ ମିଶାନ୍ତୁ । ଅନ୍ୟ ଏକ ପାତ୍ରରେ ଚିନିରେ ପାଣି ଦରକାର ଅନୁସାରେ) ମିଶାଇ ମୋଟା ସିରା ପ୍ରସ୍ତୁତ କରନ୍ତୁ । ସିରା ଅଠାଳିଆ ହୋଇ ପ୍ରସ୍ତୁତ ହୋଇଗଲେ ସେଥିରେ ଅଟାଭଜାକୁ ଭଲ ଭାବରେ ମିଶାଇ ଦିଅନ୍ତୁ । ଚଉଡ଼ା ପାତ୍ରରେ ଏହାକୁ ଥୋଇ ଖଳି ପରି ଥାପି ଥାପି ଦିଅନ୍ତୁ । ତା’ ପରେ ଏହାକୁ ବିଭିନ୍ନ ଆକୃତିରେ ଛୋଟ ଛୋଟ କାଟି ଥଣ୍ଡା ହେବାକୁ ଦିଅନ୍ତୁ । ବର୍ତ୍ତମାନ ଜଗନ୍ନାଥବଲ୍ଲଭ ପ୍ରସ୍ତୁତ ହୋଇଗଲା ।

Jagannath Ballabh is a chappan Bhog item that is offered to Lord Jagannth at Puri temple. It is one of the Sukhila Bhoga ( Dry Prasad ) which is sold in Anand Bazar for Public. Make few amount of these sweet at home..

Wheat flour 2 cups
ghee 1 cup
Sugar powdered / Nabata khand 1 1/2 cup ( in temple they do not use refined sugar. )
Cardamom powder 1 tsp
Cloves/ lavang 2-3
Camphor 1 pinch

In a pan add 2 cups of wheat flour, Add ghee.Fry for 5-6 minutes till the raw smell of the wheat flour is gone and make sure there are no lumps. Keep the flame low-medium.Fried wheat flour is ready. It has turned golden color. To prepare sugar syrup, add 1 1/2 cup of sugar/ khand. Add little water only till the sugar is immersed in water.Add cardamom, cloves in powdered form. Once the sugar is dissolved and starts boiling, check for sugar syrup consistency. One string consistency. Now add the fried flour and mix well. Once it starts leaving the sides and turning to mass like consistency
switch off the flame. It should not take more than 2-3 minutes. Drop it on a greased plate. Spread it evenly on the plate. Leave it for 10-15 min. Then take out the pieces from the plate. Jagannath Ballabh is ready.

* After adding fried wheat flour to the sugar syrup, do not keep stirring for more than 2-3 min. Once it starts leaving the sides take out immediately, otherwise the Ballav will turn hard.

* Keep the flame low- medium throughout the process of preparation.
